A\'Float Sushi is on Colorado Boulevard at the very end of Old Town. The front half of the dining room is filled with tables and what not. The back half is dominated by this kind of mini moat sushi bar thing, which diners sit around. The moat is circular (as moats are wont to be), and little boats float around inside of it. The boats are filled with plates of sushi, which the diners unload and eat as the mood strikes them. Or diners can order directly from the chefs making the sushi on the inside of the moat. In the meantime, waitresses walk around to serve edamame, refill drinks, and generally keep the area clean. The restaurant is more than just its gimmick: the sushi selection is both tasty and broad. It\'s the only place in the area, for instance, where we\'ve been able to find this kind of heaven-in-our-mouth rice and baby scallop roll that they make. Maybe this is a common sushi dish that you can order anywhere and we just don\'t know what it\'s called (likely). Nonetheless, at A\'Float Sushi we ask for the baby scallop rolls and kind of gesture idiotically with our hands. The chefs nod sagely, kind of smirk at each other, and produce what they know we want. added on 2007-05-21
